Macarons. Tonka & Caramel.

 
 

I love macarons.

And I think I have a pretty fool-proof recipe now.
I can only recommend for you to try it. 
And the ganache... 
And the salted caramel... 
can't be beat.

Macarons

150g ground almonds
150g powdered sugar
55g egg whites

50g water
150g sugar

55g egg whites
20g sugar
food coloring

Grind your almonds together with the powdered sugar in a kitchen machine to a flour-like consistency.
Then sieve, to get out any bigger pieces.
This is important, so you have a completely smooth top.
Then start to whip your egg whites with the sugar and the food coloring slowly.
At the same time, boil the water and sugar to 113 degrees celsius.
Slowly pour the mix into the egg whites.
Beat until the mixture feels luke warm.

In the meantime, mix the almond mixture together with the liquid egg whites.
In two steps, fold the whipped egg whites into the almond mixture.

Do not be shy at this step - the egg whites will collapse somewhat, that's okay.
What is not good, is if you whip all the air out of them, you do not want a runny mass!

On a prepared baking sheet, pipe the macarons in round circles (around 3 cm in diameter).
When your sheet is full, tap it to achieve a smooth surface on the macarons.

Let dry for a couple of minutes.
Bake first at 230 degrees for 3-4 minutes, until a "foot" has risen, then for 7-8 minutes at 170-180 degrees (open up the oven door to get it to cool off).

The shell should not be sticking to the sheet surface.

Let cool completely, before you remove the macarons from the baking sheet and fill them.

Milk chocolate tonka ganache

150g cream
1/2 tonka bean, crushed
160g milk chocolate
25g butter

To make the chocolate ganache:
chop the chocolate roughly and put in a separate bowl.
Bring cream and tonka to a boil.
Remove from heat, cover and let stand for one hour.
Reheat, sieve and pour over the chocolate.
Wait one minute before stirring.
Start stirring from the middle, working yourself outwards.
When you have a thick, smooth mixture, add the butter in pieces and stir in well.
Let cool in the fridge

You might have to warm up the mix a bit before you pipe it into your macarons in a circle form.

Salted caramel

35g cream
45g sugar
10g glucose
30g light brown sugar
50g butter
1/4 tsp. himalayan salt

Bring cream to a boil, set aside.
Caramelize the first amount of sugar with the glucose. 
When it has reached an amber color, add the light brown sugar and melt completely until a darker amber color is achieved.
Add the cream and stir until smooth.
Remove from heat and whisk in the butter with the salt.
Let cool.

Fill into the middle of the macarons, the hole provided by the ganache.

Ich liebe Macarons.

Und ich glaube jetzt habe ich ein ziemlich Idioten-sicheres Rezept.
Ich kann nur empfehlen es selbst auszuprobieren. 
Und die Ganache...
Und das gesalzene Karamell...
kann einfach nicht getoppt werden.

Macarons

150g gemahlene Mandeln
150g Puderzucker
55g Eiklar

50g Wasser
150g Zucker

55g Eiklar
20g Zucker
Lebensmittelfarbe

Mahle die Mandeln zusammen mit dem Puderzucker in einer kleinen Küchenmaschine bis ein Konsistenz von Mehl erreicht ist.
Siebe die letzten groben Stücke mit einem Sieb heraus.
Dieser Schritt ist wichtig, damit man eine komplett glatte Fläche auf der Macaronschale hat.
Fange nun an das Eiklar mit dem Zucker und der Farbe langsam aufzuschlagen.
Koche zur gleichen Zeit das Wasser und den Zucker auf 113 Grad.
Gieße die Zuckermischung in das Eiklar.
Schlage es weiter bis die Mischung sich lauwarm anfühlt.
Verrühre das flüssige Eiklar mit der Mandelmischung.
Hebe das geschlagene EIklar in zwei Schritten in die weiteren Zutaten.
Sei bei diesem Schritt nicht schüchtern – der Eischnee wird etwas zusammenfallen, das ist okay.
Was nicht so gut ist, ist wenn du die ganze Luft herausschlägst bzw. rührst – man will keine laufende Masse!
Dressiere auf ein vorbereitetes Blech die Macarons kreisförmig auf (ca. 3 cm im Durchmesser).
Wenn dein Blech voll ist, klopfe es ab um eine glatte Fläche auf den Macarons zu gewährleisten.
Lass es für ein paar Minuten stehen.
Backe nun zuerst bei 230 Grad für 3-4 minuten, bis ein “Fuß” sich gebildet hat, dann für 7-8 Minuten bei 170-180 Grad (öffne die Ofentür um den Ofen abzukühlen).
Die Macaronschale sollte nicht mehr an der Backmatte bzw. dem Backpapier kleben.
Lass sie komplett abkühlen bevor die Macarons entfernt und zusammengesetzt werden.

Milchschokoladen Tonka Ganache

150g Sahne
1/2 Tonkabohne, grob zerstoßen
160g Milchschokolade
25g Butter

Um die Ganache herzustellen:
die Schokolade grob hacken und in einer seperaten Schüssel verwaren.
Bringe die Sahne und die Tonkabohne zum kochen.
Von der Hitze entfernen, abdecken und für ca. eine Stunde ziehen lassen.
Danach nochmals zum kochen bringen, und mit Hilfe eines Siebes über die Schokolade gießen.
Eine Minute warten bis mit dem Rühren angefangen wird.
Fange dann an von der Mitte aus zu Rühren und arbeite dich nach außen vor.
Wenn du eine dicke, glatte Masse hast, füge die Butter in Stückchen hinzu und verrühre alles bis es aufgelöst ist.
Lass die Ganache im Kühlschrank abkühlen.

Vor dem aufdressieren in die Schalen muss sie vielleicht noch kurz angewärmt werden.

Gesalzenes Karamell

35g Sahen
45g Zucker
10g Glukose
30g hell braunen Zucker
50g Butter
1/4 Teelöffel Himalaya Salz

Lass die Sahne aufkochen, stelle sie dann beiseite.
Karamellisiere die erste Menge Zucker zusammen mit der Glukose.
Wenn eine hell braune Farbe erreicht ist, füge den braunen Zucher hinzu und schmelze es bis es komplett verflüssigt und dunkler geworden ist.
Rühre die Sahne ein.
Entferne das Karamell von der Hitze und rühre die Butter mit dem Salz mit Hilfe eines Schneebesens hinein.
Abkühlen lassen.

Dressiere das Karamell in die Mitte der Macarons, in der Lücke in dem Ganache.
