Passionfruitcreme with (mit) Cornflake Crunch.


Remember, I made Lemon Cream back in August?
Well this is basically the same thing - only with passionfruit (which makes it SO yummy) and Cornflake Crunch, which adds a great contrast in taste and texture.
The Cornflake Crunch is a recipe from Momofuku Bakery. 
Soon I'll get around to introducing the book to you - it has lots of cool recipe ideas.
For now, I bring to you this great dessert.
Easy to make, and the Cornflake Crunch will make so much that you can snack on it long afterwards!

Passionfruit Cream

110ml passionfruit puree
70g sugar
2 eggs
pinch of salt
100g butter

Pour water to a depth of about 2 inches into a saucepan, place over medium heat, and bring to a simmer.
Combine the passionfruit puree, whole eggs, sugar, and salt in a stainless steel bowl that will rest securely in the rim of a saucepan over, not touching, the water. (Never let the egg yolks and sugar sit together for more than a moment without stirring; the sugar will cook the yolks and turn them granular.) 
Place the bowl over the saucepan and continue to whisk until the mixture becomes very thick. 
This will take around 10  minutes. 
Remove the bowl from over the water and let cool to 65 degrees celsius, stirring from time to time to release the heat.
Meanwhile, cut butter into 1-tablespoon (15-ml) pieces.
 When the cream is ready, leave it in the bowl if using an immersion blender, or pour it into a countertop blender. 
With the blender running, add the butter 1 tablespoon at a time, blending after each addition until incorporated before adding the next piece. 

The cream will be pale and opaque and quite thick.
You can use the cream immediately, or pour it into a storage container with a tight-fitting lid and refrigerate for up to 5 days. 
To use after refrigeration, if necessary, gently heat in a stainless steel bowl set over simmering water until it has softened, whisking constantly.

Cornflake Crunch

170g cornflakes
40g milk powder
40g sugar
4g fleur de sel
130g butter, melted

Preheat you oven to 135 degrees celsius.
Weigh the cornflakes into a bowl and crush them with your hands to 1/4 of their original size.
Add the milk powder, sugar, salt and toss.
Add the butter and toss to coat.
(This will bind the dry ingredients to the cereal, creating clusters).
Spread the clusters on baking paper or a silicon mat and bake for 20 minutes.
They should then look toasted, smell buttery and crunch gently when cooled slightly and chewed.
Cool the cornflake crunch completely before storing or using in a recipe.
Stored in an airtight container at room temperature it will keep at least a week, frozen for at least a month.

Naja, das ist ziemlich das Gleiche - nur das es mit Passionsfrucht (oh, das macht es SO lecker) und Cornflake crunch ist. 
Der Crunch trägt ungemein zu dem tollen Kontrast von Geschmack und Textur bei.
Das Cornflake Crunch ist ein Rezept von der Momofuku Bakery. 
(Hoffentlich) bald, werde ich euch das Buch vorstellen - es hat ungemengen coole Rezeptideen.
Aber heute stelle ich euch einfach mal dieses tolle Dessert vor.
Es ist einfach zu machen, und das Cornflake Crunch macht von der Menge so viel, dass du lange danach noch davon snacken kannst!

Passionsfrucht Creme

110ml Passionsfruchtpüree
70g Zucker
2 Eier
Prise Salz
100g Butter

Giesse Wasser in einen Topf (4-5cm)) und bringe es zum köcheln.
Kombiniere das Passionsfruchtpüree, Eier, Zucker und Salz in einer Metalschüssel welche passend im Topf liegt (das Wasser nicht berührend).
Lass das Gemisch ohne Rühren nicht stehen, da die Eier sonst gerinnen und grisselig werden.
Rühre also ständig bis die Mischung dicklich wird.
Das kann ca. 10 Minuten dauern.
Entferne die Schüssel vom Topf und lasse die Creme auf ca. 65 Grad Celsius kühlen, und rühre ab und an um die Kühlung schneller zu erreichen.
Schneide in der Zwischenzeit die Butter in Esslöffel große Stücke.
Wenn die Creme fertig abgekühlt ist, belasse sie entweder in der Schüssel wenn ein Pürierstab benutzt wird, oder gebe sie in einen Mixer.
Wenn der Pürierstab oder Mixer läuft, füge nach und nach die Butterstückchen hinzu.
Die Creme wir blass und dicklich werden.

Man kann die Creme sofort benutzen oder in eine luftdichte Dose füllen und bis zu 5 Tage kühl stellen.
Um nach dem Kühlen zu benutzen, wärme die Creme leicht an (wieder in einer Schüssel über einem Wasserbad), und schlage sie mit einem Schneebesen weich und cremig.


Cornflake Crunch

170g Cornflakes
40g Vollmilchpulver
40g Zucker
4g fleur de sel
130g Butter, geschmolzen

Heize den Ofen auf 135 Grad Celsius vor.
Wiege die Cornflakes in eine Schüssel hinein und brösel sie mit deinen Finger klein (1/4 der Orginalgrösse).
Füge das Milchpulver, den Zucker und das Salz hinzu und mische alles durch.
Füge die Butter hinzu und schüttle um das Gemisch damit zu überziehen.
(Das wird die Trockenzutaten an den Cornflakes kleben lassen - es entstehen Klümpchen).
Verteile die Klümpchen auf einem Backpapier oder einer Silikonmatte und backe für 20 Minuten.
Sie sollten getoasted aussehen, buttrig riechen und sie sollten knusprig sein, wenn man sie kaut nachdem sie leicht abgekühlt wurden.
Lasse das Cornflake Crunch komplett auskühlen bevor du es lagerst oder in einem Rezept weiter verwendest-
Haltbar lagern kannst du es in einem luftdichten Behälter für eine Woche bei Raumtemperatur, eingefroren ist es mindestens einen Monat haltbar.
